All the grapes for this wine come from a trellised, hand-harvested vineyard in Stellenbosch. Grapes are picked in bins in optimal conditions to ensure quality. Pinot Gris is picked in three batches: early for freshness, middle for structure, and a small late picking to add body. This wine is predominantly made up of the first two picks. The wine is whole bunch pressed, and then naturally fermented in stainless steel tanks and old oak barrels. The wine is fresh with hints of Granny Smith apple, some pear, and white peach. 6 months of lees contact adds lovely texture and weight to the palate.
