Surrounded by a smattering of enchanting medieval villages, Spain’s most expansive province of Castilla y Leon is littered with castles of great historical significance. Once a vanguard of the centuries-long battle to expel the Moors, the high golden plateaus of Rueda are now the vanguard of one of Spain’s most beloved native grape varieties. Clean and bright with notes of white peach and passion fruit. Pair with fresh greens, tomatoes, shellfish and pastas.

Winemaking: Bodegas Pascual harvests its Verdejo grapes at night to take advantage of cool nighttime temperatures. Fermentation is controlled at a temperature of 64 degrees F. Cold stabilization and microbiological filtration are used.

Tasting notes: Clean and bright this 100% Verdejo is full of fruit. Born in the dry plains of Castilla y Leon, this wine’s pale yellow color evokes images of summer straw while its aromas reveal the natural sweetness of white peach and pineapple. Characterized by the freshness of the Verdejo grape, the palate is dominated by peach, pear, and pineapple flavors. Pleasant and persistent the finish is crisp and nicely balanced.

Pairing suggestions: This wine pairs particularly well with fresh greens, olives, brie, tomatoes, fish, shellfish, and pasta.
